How do I estimate the mortar I will need?

I am building a solid stone shed that is 10' square and 6' feet high. I'm using an ashlar limestone with a sawn top and bottom and a split face. It is all cut in 4" to 8" heights and 8" to 22" lengths. The depth of the stone is all between 3" to 5". The wall will be two stones thick, so about 9" thick (with rebar and mortar running up the middle and wall ties for lateral strength). I've never done anything like this and am trying to calculate how much mortar I will need to order and what type of cement.
